Chicken Goujon’s

I tried Jamie Oliver's chicken goujon recipe and this is my variation! Serves 4



Ingredients:

4 skinless chicken breasts (approx. 450g in total)

2 wholemeal pittas (look for pittas with protein, approx 3g fibre and no artificial additives)

20g finely grated strong cheese (e.g. gruyere or strong cheddar)

½ teaspoon mixed herbs

2 cloves of garlic, crushed

Juice of 1 lemon

1 egg

Sea salt & black pepper


Method:

Preheat the oven to 200℃. Line a baking sheet with greaseproof paper.

Tear the pitta into strips and process them into fine crumbs in a food processor. Don’t over-process or it will start to clump together. Pour the crumbs into a large dish.

Slice the chicken into goujons or strips.

Blend the egg, chopped garlic, cheese, herbs, lemon, salt and pepper in a blender.

Pour into a freezer bag, followed by the chicken pieces. Massage the mix into the chicken.

Dip each piece of coated chicken in the pitta crumb and press in.

Place on the baking tray and bake for 18 – 20 minutes, turning after 10 minutes, until golden and cooked through.

Serving suggestion: With a large salad or in a whole grain wrap with crispy lettuce.

#economy #savetheenvironment Roast chickpeas while cooking the chicken as a healthy carbohydrate to have alongside or set aside for another meal. With the cost of fuel and being mindful of the environment, I try to get good value every time the oven is on.
