Crunchy Flax Crackers

Crackers are just a vehicle for eating delicious toppings, but they can add sugar and unhealthy additives to an otherwise healthy snack. Try these super alternative. They contain lots of healthy fibre and are a source of selenium, potassium and iron without any sugar. Change around the spices to suit your taste.




Ingredients:

130g ground flaxseeds

50g grated strong cheese (e.g. gruyere or strong cheddar)

2 teaspoons dried oregano

½ teaspoon dried chilli flakes

½ teaspoon mustard powder

Sea salt & black pepper

150ml cold water


Method:

Preheat the oven to 130deg C fan oven. Line a baking sheet with greaseproof paper.

Mix all the ingredients in a bowl to form a dough.

Spread the mixture out onto the lined baking sheet. Use your hands or a palette knife or fish slice to flatten the mixture out as thinly.

Bake for approx. 30 minutes. Increase the oven temperature to 200deg C and bake for a further 10 minutes, until the mixture is slightly brown and firm to the couch in the centre.

Remove from the oven and allow to cool before breaking into crackers.
